    June 14, 2016 - Drank this at My Dining Room last night with a group of wine enthusiasts. Theme of the night: Merlot or predominately Merlot wines.

    Bottle breathed for 8 hours followed by 2 hours in the decanter. Had some experience with this wine so am giving it a more air than before to test the effect of breathing on its quality.

    As compared to previous tastings, this wine is more ready and ripe. The energy is shining brightly with an abundance of ripe red fruits, liquorice, figs, leather and wooden cupboards.

    Resemblance to Barossa Shiraz is unmistakable, probably due to the terroir. This wine has a nice, long and smooth finish.

    6/15/16, 6:48 PM - noticed you decanted more compared to the previous note which is 1 hour of decanting.

    6/19/16, 2:25 AM - The extra breathing has benefitted the wine, making it more approachable and ready to drink. However, not everyone appreciates the extra 'oxidized' stage. Do test it at different stages to compare which style of oxidation do you prefer for the wine.
