  August 20, 2017 - Slow Ox for 2 yrs and then tried my first sip. At this point if had tasted blind by looking at the color and density combined with a flowery, peppery nose with some hints of spice I would have guessed red Burgandy. I let it slow Ox for a other out and served through a Venturi. This was the trick. The nose changed completely, the peppers and any hints of green were replaced by red currants, back cherries, new leather, spice, cedar and some tabacco. The palate was smooth very balanced and it drank a lot bigger than the color and density in the glass would suggest.
  
  Really good wine, that is another 2011 overachiever.
