    January 28, 2018 - Just pulled from my cooler. Probably needs to open up. Initial impressions: Color leans from purple to Mahogany and seems a but dull. Bouquet is raspberry. Wafts slowly and very, very lightly perfumed. Raspberry centered palatte but fruit clearly needs to open. Going to walk away and come back to this note and finish in an hour or so.

    Back. Wine had definitely developed. Very nice structure and fruit has come up. Still Raspberry and dark cherry. Strong tannins and acidity. Looked these guys up on line. 20 days in cement cistrern and then 24-30 months in Slovanian Oak. I think this is one to sit on for a while and it will develop nicely. You can drink this now if you like them young and "tight". I have 3 more and plan to give it at least a year or two before I try again. Then we'll see.
