  March 11, 2018 - A beautiful golden yellow in color. A rich nose of tropical fruits and honey. Tactile and mouth coating. Time has stolen more acid from it than I like. The sweetness isn’t off-putting, but it could have been more balanced. The salinity that is typical to Santorini gives this character. But I think it is getting tired now (I should note that this bottle wasn’t stored well initially).
  
  3/18. I had a little bit left over from a week back that I opened this afternoon. There is still life in this. The sweetness is no longer overshadowing the acidity and although there is now less body to this now, it is still in character, with a very nice volcanic bite to it.
