  January 3, 2019 - This is a very bright Chianti, may need some time to soften up a bit, 30 minutes not nearly enough, but I didn't have more time. So what I do in these situations with a wine that otherwise have a good profile (and 100% Sangiovese almost always does), I just add a bit of sparkling water (Eg San Pellegrino) and a few minutes later it just becomes a wonderful creamy spritzer. This wine is just perfect for this treatment.
