So interesting in that it is all Chablis to start and to finish with a whole lot of the vintage in the middle. What do I mean? Well, a fragrant Chablisien nose of oyster shell and iodine is followed by a relative rich, glycerine entry of ripe pear and apple rather than citrus. This often seems to be the telltale sign of a riper vintage in this region. Fast forward to the back end, though, which has marvelous soil and incredible salinity to wrap things up. Best of all, as is often the case with Dauvissat wines, with air, everything became leaner and more focused. Still not quite integrated at the age of 6+, I think this could turn out to be a really outstanding, if not classic, bottle of La Forest.
