January 19, 2019 - Upon Opening: Graphite, hints of raspberry, blackberry, faded cigar box, still lively and not insubstantial fruit on the nose; pure, balanced, extended, poised, age comes into focus on finish, which is long
After 45 Minutes: Underbrush, sous bois on nose emerges, and more wild, gamey; palate is fairly similar to initial impressions but more intense, also gamey, and rather more captivating
After 1 Hour 15 Minutes: Nose is more faded; palate is more integrated, still full, intense, gamey, pleasing
After 1 Hour 45 Minutes: Nose faded further; palate is substantially more integrated, a depth and intensity that is lovely, alluring
After 2 Hours: Aquatic and musky character emerging on nose and palate but still with a very attractive depth and intensity
A delightful, aged, dynamic, though somewhat unstable wine; a perfect pairing with goose
