    February 2, 2019 - Had this last night at Cowboy Star in San Diego.

    My Director was kind enough to offer this up as payment due for a bet made last year.

    In a word- HOLD. This wine is a beast right now, and needs ample slumber to work itself out a bit.

    Decanted for 90 minutes at home, back into bottle, and another half hour at resto. This is a full throttle effort with nice bouquets of black and dark fruits, a mouth filling mid, and slightly present tannins. The finish had a bit too much heat on it, and we both agreed that it begged to be paired with food.

    When the wagyu skirt steak arrived, this wine perfectly accompanied the fat and texture of the steak. I wouldn't enjoy this nearly as much without a nice steak to offset some of the heft of this wine.

    A nice effort, and it will improve. Hold until 2023 at earliest to let it shed some baby fat.

    2/2/19, 12:27 PM - Was this the S&P 500 bet? Thanks for taking one for the team, I'll definitely let my 13 HAs sleep for several more years. I have a feeling the 2012 F&F is just as wound up.
