April 30, 2019 - Dinner at Shishen Hanten (Shishen Hanten, Mandarin Orchard, Singapore): Still young, but this was good. The nose wafted out of the glass with lovely notes of green apple, ice-cream soda, ripe gooseberries, white peach, and a little tail of perfumed florals. Very pretty. The palate had an oily weight and texture to it, but a lovely spine of acidity kept it beautiful light on its feet, with a lovely burst of tropical fruit, guava, melons and white flowers springing out on the midpalate, especially when paired with a bit of seafood. Good finish too. Drier, more minerally, with a beautiful stony end, but still having a nice, plump fruitiness. Good stuff, but all still a bit primary and tightly wound - it needs a good 6-7 years yet.
