    10/13/19, 2:09 AM - thank you! I panicked a bit based on your comment and opened my last bottle last night, Lowered it to about 62 degrees and let it breathe for 45 minutes. It drank very well. I paired it with lamb shank and my partner had calfs liver. it has turned tawny in color but had great legs and power and best of all the complexity was still there. The play of tastes against the lamb shank and rosemary with a bit of fat played beautifully against the wine with the cedar, slightly smoky fruit and power l I regret it was my last bottle. I believe that based in this bottle it is slightly beyond the plateau
