December 7, 2018 - (Disgorged in fall of 2012, 100% Chardonnay from Côte des Blancs)
Lovely yellow colour and still showing plenty of tiny bubbles in the glass. There’s an explosion of lovely butter, cream and butterscotch notes on the maturing nose. With time in the glass it shows hints of hyacinth and minerals as well, but hidden deep under the creamy layers on top. Still lots of freshness on the palate with citrus acidity and creaminess before the nice balanced finish showing butterscotch and some reminiscences of sea buckthorn.
This is drinking very lovely right now and has stepped up a few steps compared with last time I had this a few years ago showing much more maturity on the nose and has evolved very well. Should keep for a few years more, but will transform into more tertiary notes over the coming decade.. (Probably best 2015-2025)421 views
