    August 1, 2019 - Day 1: Popped and poured. Consumed 1/3 bottle over two hours. Minimal aromas and flavors. A bit astringent. Not much to enjoy here now or in the near term. I’m not convinced there is long term upside. Replaced cork.
    Day 30: Fell apart, whereas I’ve seen other wines blossom with this much time.

    9/20/19, 4:36 PM - Some do. For example, I recently had a 13 year old Montrachet that went from being acidic to a stunningly gorgeous wine 30+ days after pulling the cork.

    9/20/19, 9:31 PM - Duration tests can be great to learn a wine, just curious if you tried it throughout the 30 days and have any interim evolution notes along the way on say day 5, 10, etc?
