However, after it had been open for a couple of hours some of the fruit was replaced by acidity. As much as I am a fan of screwcaps, I have to wonder how a better wine like this would age under cork. Counterintuitive in that the plastic/metal combination makes a better seal than the piece of tree bark? Maybe. But then again, it's worked pretty well in Burgundy for a couple of hundred years. I know I prefer a soft pillow to a rigid one when I sleep. Maybe good wine does, too.
