December 2, 2019 - Lime rind and underripe gooseberries...some pear in the mid palette- a tart Sauv for sure...but one that I like. A few minerals round it out. Drink it alone if you like that end of the spectrum or pair it with heavy food that has a bit of grease - it will cut it nicely!
