  January 11, 2020 - Needs a little decant to open up. 45 min or so is good but not too long as it flattens out quickly afterwards. Tannins are shot but the back layer of fruit is lovely with just enough spice to make it peppy. I drank it by itself but it feels like it would lean into the curve on a little pasta course or maybe some roast pork. Definitley would work with cheese without overwhelming at this point.
