    May 25, 2020 - In honor of Memorial Day weekend, we decided to open a nice cabernet. Based on reviews from this site, we decanted for 5-6 hours. This wine was paired with scratch cauliflower gnocchi, andouille sausage, and pesto. I am not certain I have ever had a better food-wine pairing.

    Aroma: Blueberry jam, lemon curd, fresh eucalyptus, cinnamon, sandalwood, cotton candy, green olive, spearmint, and anise

    Taste: Cherry pie, blueberry preserves, lemon meringue, eucalyptus, and a hint of leather

    Finish: Bold, long, tannic, and balanced

    For anyone that likes good cab, and regular spends $$$, this is the wine you need to buy instead (or in addition to!). We have done this cab, triple blinded, next to other cabs that are much more expensive. It wins every time. The fruit-forward balance, paired with the ability to add to enhance a meal, it unmatched in the cabernet world at this price point. I am certain aging this wine will strengthen its balance, but I can't imagine what that would look like given the product as it is today.

    5/25/20, 10:34 AM - Terrific notes GK! I got a bunch of these on sale for $70 a bottle and was very impressed. I may skip ‘17, but will load up on ‘18 when it is released. Cheers my friend!
