  July 6, 2020 - Iapetus 2017 Figure 2: I enjoyed this acid-driven pét-nat (short for Pétillant Naturel) with smoked salmon pinwheels the other day. It’s Vermont-grown (Yes, Vermont!) and made from 100% La Crescent grapes, with flavors of citrus cream, brioche and toasted almond. This tasty natural sparkler definitely deserves a place at the table for any occasion.
