Community Tasting Note

  • Carl Thoma Likes this wine: 92 points

August 9, 2020 - First, it is hard to rate wines that are 33 years old. Do you use the same standard critics do and try to "predict"? 30 years ago to get this good of tasting Bin 707, based tasting thousands of wines, the critics would rate 95+. Yes, fruit is mostly gone, past it peak bu sound, good acidity, appreciate more for texture, acidity, not funky. Tastes and flavors are a function of imagination. Everyone said for 33 years old it is good. Perfect food wine. Do I have any desire to drink the balance of this case? No.

I don't think you can use the same bar as critics did many years ago. They experienced this wine in it's prime.

Yes, the flavors would be varied at this point - such a nice experiment.

Can't imagine a food it would not pair with...such a nice review.

8/9/20, 7:33 PM - I bought when it was released at wine store in Chicago. It has been stored in a professional cellar (temperate controlled) since purchase. cork was good on removal. I did not mention but get bottle variation at this age. I had this same wine a two years ago was not drinkable.
