    August 29, 2020 - With Comtes, you want to catch it when the dominant citrus notes have evolved into something savory, complex and not too acidic, shrill or aggressive, but also not too flabby or beginning to oxidize. This is it. Or maybe just a millimeter past it since the youthful energy has faded. Trying to catch everything just perfectly is like balancing an elephant on the head of the pin, maybe theoretically possible but mighty rare. This was formerly my favorite vintage of Comtes but the ‘96 may now overtaken it.
