    August 31, 2020 - Appearance: medium lemon, some green and gold highlights, medium- tearing, lots of fine sediment, noticeable gas evidence, slight rim variation.

    Nose: clean, developing, pronounced intensity, lime, tangerine, green apple, white peach, apricot, jasmine, wet stone, petrol, honey.

    Palate: medium dry, high acid, low alcohol (10.0%), light body, medium+ intensity, medium+ finish, lime, tangerine, green apple, white peach, apricot, jasmine, wet stone, petrol, dried apricot.

    Overall: A pretty classic, middle-aged Kabinett. Very perfumed with a pleasant mix of fruit, floral, and mineral aromas, along with the expected tertiary flavors/aromas of petrol, honey and dried apricot. The acid/sugar balance is rather nice, but the wine does feel slightly on the sweeter end of the Kabinett spectrum. Delicious on its own, and can handle eclectic food parings; this wine paired wonderfully with both Moroccan spiced Chilean sea bass and general's chicken. Has the intensity and structure to age for a few more years yet, but right now it does feel pretty much at peak.
