    November 21, 2020 - Profoundly good; on PnP, and better with each glass. Clearly built with impressive structure, there's already a fair amount of complexity and length. That said, I think I'd prefer to see this understated gem in another 2-4 years, at which time I expect this will have much more to say. highly recommended

    11/22/20, 3:16 PM - About 20 months ago, I opened a 2005 for a buyer for a natural wine store in Germany. My bottle was shot, all the fruit was gone, but tons of acid remained. Personally, I think it might have recovered on day 2, but it was at a dinner near Dusseldorf, so I'll never know. That said, because of the winemaking growing/process there, I think they're all at their best within 5-8 years from vintage. Not to say some won't last, but rather to say I'll open them when the odds are in their favor. Not all wines need to age to get better, as you know.

    12/25/23, 6:18 AM - Tim, assuming you have not had another bottle of this since Nov 2020. Wondering if you drank the last one with food, we are thinking of a post-dinner bottle with friends, don’t know if that’s advisable. Thoughts?
