December 2, 2020 - Decanted for ~3-hrs prior to serving (blinded), this was showy on the nose from the get-go - common descriptors/comments were, "You brought a Vosne?", "this must be a Vosne lah, don't mind-F me" etc... But yes, this exuded very nice florals/roses, spice/sandalwood and guesses immediately gravitated towards villages close to the VR-NSG border. It probably "didn't help" (w/ the guesses) that this was also very pretty & elegant on the palate, with great minerality & freshness. Perhaps the only misgiving was that this was somewhat ageing (given that this is a '10) a tad faster than it should, where bottles from a previous case showed more fruit/intensity/concentration/sappiness, this displayed a bit more complexity that's typically brought about by age. Not bad from an enjoyment point-of-view. Only snag is, how long will it continue to cellar and drink beautifully? For now, this was exemplary.

12/2/20, 10:30 AM - I’ve definitely noticed this from Chevillon 10’s myself, quite advanced.

12/2/20, 10:56 AM - It is very surprising to hear that a top Chevillon cru from a great vintage would be at or beyond its peak at age 10. Not the usual aging trajectory for this house (or other well regarded Nuits producers for that matter). Cailles can be more tender than Vaucrains or Les St. Georges, but still...

12/2/20, 8:02 PM - Am not generalizing though. Unfortunately I don't have enough "sample size" (with no more bottles from my previous case) to do a comparative tasting and draw a definitive finding/conclusion. That said, I can only pen my observation for this particular btl of the '10 Cailles (which was the 2nd btl from this 2nd case) but I'll also add that it was consistent with the 1st btl too... To be transparent, this 2nd case was from a different merchant (but one which I trust re. provenance - Flint Wines in UK) whereas the 1st was from another (Uncorked), but bought at different times...
