12/13/20, 5:32 AM - The previous time I had tried it, I only decanted for 3+ hours and the wine was still too tight, so at this point, with a wine of this caliber in a classic vintage, I think the long decant served it well. We paired it with a dry aged filet in a Vietti Barolo reduction with mushrooms and shaved white truffle and it was a pretty awesome pairing 👍
