    June 3, 2021 - Pop and pour analysis (5:16): Deep oak, menthol, and cherry on the nose. Wide and expressive. Nice deep purple colour. Dry and tart entry, gentle but lingering tannins, clean bing cherry acidity on the finish. Will give time to wake up slowly. After about 10 minutes a bit of funk comes out on the nose and the wine thins out but also integrates and becomes almost dagger-like and sharp. This will slice through fat. An hour later the balance is quite nice, but make no mistake it is bone dry, and dagger-like in its acidity.
