April 24, 2021 - Light gold colour. Nose is savory and quite shy. I am getting wax, hay, notes of fermentation, yet with a sweetness somehow behind it all. Took 2 days for the palate to relax and reveal fruity lemon flavors to accompany the abundant mineral and acid driven body. Quite a long finish. Very Teutonic!
