  September 20, 2021 - This Dom is already drinking great. Still quite primary but drinks so easily. Just delicious stuff. I didn’t really get as much of the yeastiness or smokiness you’d normally expect from a Dom, but this is will likely emerge with further age. My companion, who doesn’t usually care for reduction-oriented champagne, enjoyed this immensely. A real treat.
