  November 1, 2021 - Quick notes - bottle opened on a whim Monday night, paired with homemade pappardelle Bolognese to celebrate my birthday after getting home from a long weekend in the Bahamas.
  
  Bottle threw off a ton of sediment. Had a slight burn. But overall enjoyable and think this could be even better in 3-7 years as it has plenty of life in it. It was my last bottle, but well worth the discount I got it for late last year!
