  December 31, 2021 - New Year's Eve 2021, good riddance to this awful year. We celebrated by day drinking a bottle of this to accompany some homemade gougeres. Pretty pale gold in the glass, nice persistent mousse. Hay and mineral nose, balanced on the palate. Lots of lees-driven depth, medium acidity. Not the most profound champagne I've ever had, but certainly well made and quite enjoyable.
