    February 10, 2022 - Drank over three days. Three-hour slow ox on day 1 had this in a pretty good place. Tannins were still strong, but nearly as grippy as when first opened. Right off the bat, the green notes of cab franc and merlot fruit were noticeable. Nice balance of fruit, tannins and acidity over the three days. After 50 hours opened (vacu-vin overnight), the fruit was still going strong, but not overpowering at all. Not a lot of secondary notes, but not surprising for a two year old wine. Not as savory as a true bordeaux, but I don't think it is trying to be that any way. Drinking well now, but will drink much better with a few years of bottle age. I'll probably open the next bottle in two or three years to check in.
