    May 8, 2022 - 80% Pinot/20% Chardonnay, 4.5 g/L dosage, disgorged August 2018. Poured a rich, golden color into our Glasvin champagne stems. Right out of the gate, the nose gives bruised red apple, pear and some brioche; very hard to tell it is an extra brut (for me at least). On the palate, tastes match the nose plus a little ginger, toasted almonds and other autolytic notes. It is here where the extra brut shows itself. The mousse is rich, but not creamy with the acid clearing things up resulting in lingering red apple, peach, ginger and almond notes. Oxidative, and the extra time on the lees is quite suitable for my tastes. We thoroughly enjoyed this wine with caviar, creme fraiche and popovers because of the acidity; I don't think a brut version of this wine would have worked as well.
