    August 20, 2022 - 3 hour slow ox. Moderate tannins, blue/black fruits. Drank half next day and improved a couple points. The palate is dense without being overpowering. Smooth, fully integrated tannins, and a 30 second finish.

    8/22/22, 5:26 PM - I typically open the bottle and stand it upright at 60 for several hours. I use a Vinglace bottle cooler for this most the time. Some will say removing the cork only oxygenates the wine at the top, yet it works wonders for me because I typically drink half the first night and by the time the second glass is poured it has been at least an hour with the bottle open. Then I pour the balance - exactly 375ml in a split bottle and recork and place in the frig. I pull that bottle from the frig 1-2 hours prior for the next day's meal and repeat - one glass with dinner and one about 60 minutes following dinner. I began doing this years ago when my wife stopped drinking bc of headaches. She now takes "sips" of my glass. Hope this helps!

    8/23/22, 10:34 AM - Thank you very much for all the details, it makes a whole of sense to me. If I can suggest something I will pour the half bottle into the 375 split right after opening and then proceed with your normal routine!
