Introduction
with Bernard Hervet, General Manager, Domaine Faiveley
Flight 1 - Amuse-Bouche (1 note)
White
2008 Faiveley Montagny Blanc
Begins with green apples and transitions to flinty minerals. Long minerally finish.
Flight 2 - Duet of Oysters (1 note)
White
2008 Faiveley Chablis 1er Cru Vaillons
Citrus, mainly lime, and minerals. Goes great with oysters. Really brings out the briny characteristics. Great synergy.
Flight 3 - Escargots in Puff Pastry with Garlic Butter and Parsley (1 note)
White
2006 Faiveley Corton-Charlemagne
Bacon and smoke on the nose. Sweet honeyed fruit and smoke with a firm core of acidity. Beautifully balanced.
Flight 4 - Roasted Squab with Foraged Mushrooms (3 notes)
Red
2008 Faiveley Beaune 1er Cru Clos de l'Ecu
Agree with Tanzer. Needs some more age. Nice balance of acidity and fruit. Tannins a bit harsh on the finish.
Red
2002 Faiveley Volnay 1er Cru Santenots
Deep black cherries and velvet. Incredibly complex and suave. Very impressive.
Red
2002 Faiveley Corton-Clos des Cortons Faiveley
Still a bit young. Cherries and spice. Herbs and balsam on the nose.
Flight 5 - Boeuf Bourguignon (3 notes)
Red
2006 Faiveley Gevrey-Chambertin 1er Cru Les Cazetiers
Quite closed right now. Aromas of ripe, even cooked red fruit. Hard to assess right now.
Red
2002 Faiveley Latricières-Chambertin
Agree with Tanzer, particularly regarding aging. Delicious but will improve even more with age.
Red
2008 Faiveley Latricières-Chambertin
Completely disagree with Tanzer on this one. This wine is young and approachable right now. Just lovely. Silky and floral.
Flight 6 - Camembert (2 notes)
Red
2000 Faiveley Mazis-Chambertin
Starts lovely and silky with fine red fruit, then turns flinty and somewhat bitter. A near miss.
Red
2008 Faiveley Chambertin-Clos de Bèze
Lovely now, but Tanzer says to wait until 2019, and I wouldn't disagree. Perhaps the best of the night.
