White - Sparkling
1989 André Beaufort Champagne Grand Cru Brut (élaborée par Jacques Beaufort) France, Champagne, Champagne Grand Cru
Dark gold and foggy in appearance. Tons of almond aromas, along with a slight sherry / oxidized note. Showing a fair bit of age on the nose along with caramel, red apple skins, stewed pear, and a hint of tart green apple. Judging from the nose this would appear almost over, yet it shows quite a bit more youth on the palate. Lots of yeast, salty toffee, spicy candied ginger, baked red apples, along with a tart element displayed as green apples and fresh lemon juice. A long length finish ending on notes of lemon juice and gingerbread. Light bubbles that faded fairly quickly. Some moderate acidity is displayed in the mouth, yet a crisp punch of acidity peeks through at the end. Seeing as I prefer my Champagnes on the older side, this was drinking beautifully, however based on this bottle if you've got some in the cellar I'd give one a try as this isn't getting any better. Very good.

1991 Albert Morot Savigny-lès-Beaune 1er Cru La Bataillère Aux Vergelesses France, Burgundy, Côte de Beaune, Savigny-lès-Beaune 1er Cru
Opened and let breathe for 3 hours. A blast of bright red cherry aromas, along with a ton of violet floral notes, a hint of red raspberries, and wet moss. Lots more red cherry follows through to the palate, yet with a fair bit more spice. The violet floral component shines, along with some dark berries and earthy notes. Long length finish ending on notes of red cherries and a hint of spice. I had a small taste soon after I opened it and it was like a brick wall of tannin and acid, but mellowed nicely after a couple hours to reveal a pleasant bite of acidity. Overall this is still drinking very youthful, but does display some nice aged qualities and is delicious with some air. Very good.

1966 Château Palmer France, Bordeaux, Médoc, Margaux
There was some brett on this bottle when the cork was first pulled, but with 4 hours of air it had completely blown off. Powerful on the nose, showing rich aromas of sweet black cherries, cedar, graphite, cigar leaf, fresh mint, saddle leather, and spicy black pepper and clove. Just a fantastic display showing beautiful aged Margaux characteristics with youthful flare. Onto the palate, more of that shaved pencil shavings, rich black cherries, black pepper, old leather, cigar leaf, and sweet cassis. A hint of menthol surfaced as well. With a finish that seemed to linger forever, notes of black cherries, menthol, and clove appear. Still harnessing tongue numbing acidity, the tannins are in perfect balance and fully resolved. Wonderful depth to the palate with a silky texture that was a true pleasure to drink on this evening. What a classic example of well aged Palmer right in it's drinking window. Outstanding
