Flight 1 - The starting reds to go with Spanish Ham (2 notes)

Red
2010 Finca Villacreces Ribera del Duero Pruno Spain, Castilla y León, Ribera del Duero
89 points
Crimson purple red with a youthful look.
On the nose, quite oak dominance, spice & blackfruits & blackcurrants.
Rich fruity entry with blackfruits, blackcurrants with some meatiness. Good ripeness and acidity but it lacks strong finish to go into another level.
Drinking well now with supple tannins.
Red
2006 Bodegas Pintia Toro Pintia Spain, Castilla y León, Toro
91 points
Dark core with purple hue, plenty of spice on the nose, with dark fruits and prune and quite savoury, showing hints of roast herbs and truffle.
On palate, nice and firm structure, robust and powerful. This is a more serious wine compare with the 1st wine. Firm chewy tannins with long finish.

Flight 2 - Rose & Sparkling to pair with Tapas & Paella (3 notes)

Rosé
2011 Marqués de Riscal Rioja Rosado Spain, La Rioja, La Rioja Alavesa, Rioja
87 points
Light cherry red, the colour pretty dark for a rose. Floral nose with red fruits, good freshness too.
Lots of mineral and red fruits on palate. Good bodied with a medium drying finish.
White - Sparkling
N.V. U més U fan Tres Cava Brut Nature 1+1=3 Spain, Cava
87 points
Nice bright straw yellow, fresh toasty nose with some yellow fruits. A simple sparkling wine.
White - Sparkling
2008 Juvé y Camps Cava Brut Nature Reserva de la Familia Gran Reserva Spain, Cava
90 points
Light straw yellow, very delicate nose full of seafood stuff, very interesting. It has some biscuity and toastiness at the background too.
Nice elegant palate and supple texture let me thought that this has some aged, but in fact it is still pretty young. Biscuity, saltiness and lightly smokiness. Long finish.
It goes very well with the seafood Paella.

Flight 3 - Another 3 reds for the Suckling pig (3 notes)

Red
2006 Bodegas Emilio Moro Ribera del Duero Spain, Castilla y León, Ribera del Duero
89 points
Dark ruby red with crimson hue.
On the nose, young and still very prominent vanillin oak with lots of black fruits.
Medium bodied, blackfruits and oak integrated very well with nice sense of elegant. Medium+ finish with chewy tannins.
Red
2005 Valtostao Ribera del Duero Legón Premium Spain, Castilla y León, Ribera del Duero
90 points
Dark ruby with purple hue. A fragrance nose with dark fruits, spice and oak.
Powerful palate with good structure. Blackcurrant and spice shown in a medium+ bodied frame.
Medium finish with a grippy tannins.
It is very different compare to the Bodegas Emilio Moro tasted in the same flight, more robust and firm.
Red
2000 Fernando Remírez de Ganuza Rioja Fincas de Ganuza Reserva Spain, La Rioja, La Rioja Alavesa, Rioja
91 points
Dark ruby red brick red hue showing its age. Barnyard nose along with some red/black fruits underneath. Still quite nice and subtle.
The palate is smooth and elegant, showing barnyard, leather, cherry and sweet red fruits. Nice long finish and fine tannins.
Enjoy this wine as it showing good secondary development.

Flight 4 - Ending dessert wine for the cheese (1 note)

White - Fortified
N.V. Emilio Lustau Jerez-Xérès-Sherry East India Solera Spain, Andalucía, Jerez-Xérès-Sherry
91 points
Dark amber colour and clear. It has a strong nutty nose and full of caramel cream, along with raisin and honey. Powerful & robust on palate, possess balance sweetnes and acidity. Lots of nutty caramel flavours and a long lingering aftertaste.
It reminds me of the Penfolds Grandfather tawny tasted erlier this month, equally good but this is more robust.
