1993 Moët & Chandon Champagne Cuvée Dom Pérignon France, Champagne
Mature and quite expressive on the nose showing tons of rich salty caramel, yeast, baked green apple, ginger spice, and a touch of lemon juice. Toast, yeast, and rich toffee on the palate, with baked green apple skins, candied ginger, followed by a light lemon zest cut on the end of the palate. This bottle didn't have a ton of bubbles left, but was fully mature and a delicious start to the evening. Lacks the acidity of the top vintages, but wasn't void of acidity. No need to age these any longer, drink up and enjoy. Very good+

1980 Chandesais Emile (Négociant à Éleveur) Chambolle-Musigny France, Burgundy, Côte de Nuits, Chambolle-Musigny
Picked this up in April when in Burgundy. Never heard of this producer and no idea of the grape source but colour and fill looked great so figured it was worth rolling the dice on. Surprisingly great nose showing tons of bright red fruit and boysenberry, along with some black pepper spice, a dark cherry undertone, and a hint of anise. The palate was a bit flat and underwhelming, showing more boysenberry, black raspberries, and plenty of rich black cherries. The fell off a bit on the back end with a short finish and lacked acidity, but wasn't dead by any means. Pleasant, but nothing special. Enjoyable more for sentimental reasons than anything else. Very good-

1990 Château Montrose France, Bordeaux, Médoc, St. Estèphe
Slow ox'd for 6 hours then decanted 30mins before serving. What a nose, showing incredible richness and concentration. One would surely guess younger than this was, showing tons of graphite lead pencil, rich dark black fruits, shoe leather, cassis, cedar, muddled fresh mint, and plenty of clove spice. Delicious and mouth coating on the palate, with plenty more graphite and cedar coming through, along with some rich sweet dark berries, black cherries, leather, cigar box, plenty of spice, and a huge kick of menthol towards the back end. Gripping, rich, concentrated, backed by plenty of acidity and superb balance. Velvety in texture, this is flirting with perfection. The high scores here are certainly justified. It's amazing how youthful this is showing, I can't wait to see where these are headed with some more bottle time. Outstanding +
