Introduction

This was a special white truffle dinner at Spiaggia with the International Wine and Food Society of Chicago. Every course (except dessert) was covered in a beautiful layer of shaved Alba white truffles. As a group of about 35 people, we went through two pounds of fresh truffle! Mmmmn...

Flight 1 - Cardi con Fonduta (1 note)

White - Sparkling

As always, this showed great. Lovely rich yeasty champagne with good underlying acidity.

Flight 2 - Uova con Burro Fuso e Parmigiano Reggiano (1 note)

An absolutely delicious whole soft-boiled egg with brown butter and parmigiano, smothered in truffles - a highlight! The wine here was almost a palate cleanser that highlighted the dish itself.

Nice mineral dried herb (oregano?) iwth a tight white fruit on the nose. Full white tight fruit on the palate with a touch of spice and nice acidity.

Flight 3 - Tortellini in Brodo (1 note)

Tortellini in a capon broth with truffles. Here the food was more subtle and the wine match was very complimentary.

Full golden yellow color. Forward nose of floral ripe yellow fruit and clear toasty caramel oak. Hugh rich sweet yellow fruit with round oak on the finish. Very nice.

Flight 4 - Risotto Organico (1 note)

A wonderful cheesy thick risotto with truffles. Again the wine/food pairing was wonderful.

Full deep black/red color. Huge aroma of cherry, plum, and black licorice. Big dried black fruit and cherry on the palate. With a long round tannic anise finish.

Flight 5 - Vitello al Barolo con Polenta (1 note)

This was a wonderful braised veal neck dish, but the truffles were more of a seasoning than a centerpiece. The wine took a little time to open up but with the air and the food, it really began to sing.

Full deep red color. Forward aroma of rich red fruit with earthiness and a hint of charcoal. Big tight super-ripe black fruit with searing acidity and a firm tannic frame. Opened up remarkably with about 15 minutes in a big bulb glass. 93-94 pts.

Very rich super-ripe plum black fruit. A very nice amarone with a long round finish.

Flight 7 - Fritelle di Ricotta (1 note)

A deep fried ricotta cheese fritter drizzled with truffle honey - absolutely fabulous. The Rieussec was singing and for me was WOTN.

Magical orange gold color. Singing aroma of clean bright vanilla cream with hints of botrytis. Rich thick unctuous sweet carmelized yellow fruit. Lovely! 94-95pts.
