It was great to see some old friends and catch up. The wine and food were all great, too.

A real interesting experience here. We paired this with a 2002 Gimmonet Special Club and by comparison this felt a bit flabby and fleshy. We put the bottle aside and came back to it with desert and the bottle had really firmed up and showed a far more crystalline nature. Lots of citrus, and lots of white floral notes towards the end of dinner. Beautiful.

Killer bubbles. The fruit has laser-like precision and were incredibly deep. Great energy too.

Impressive as always. Sea breeze aromas. Some herbal tones, and fresh apples and pears. Palate was in a great spot, minerality had a real edge to it and the fruit was layered and complex. Chablis at its finest.

I could drink this all day long. Have patience with it, though. This needed about 6 hours decanting and another hour open at the table before it fleshed out. Tim described it well as having white burgundy-type texture. Lots of brine, lemon, and some cream.

Had the sweet red fruit profile that Serafin Pinot tends to have. The oak was there, but not distracting. Though the palate was velvety with spicy red fruit and floral notes I found it somewhat boring...maybe a bit closed down?

Definitely got better over the course of the night. Thought that the fruit built in complexity with some nice floral elements coming to the front over time. Definitely a broad-shouldered wine, this is still an infant.

The best showing of this wine thus far. This had billowing aromatics of tobacco, green pepper, red fruit, and roses. Palate was deep and fleshy with a lot of complex tobacco and dark fruit woven together. This can live a long time, and is also drinking beautifully right now.

Really liked this with its coolish fruit and crisp finish. Went nicely with our cheese and desert.

A really nice sparkling rose. The fruit was juicy and yeasty and there was nice floral lift. Great energy too.
