Flight 1 - Aperitivo (1 note)

White - Sparkling

Crisp and refreshing, with nice delineation. Not for aging.

Flight 2 - Dinner (4 notes)

White
2012 Castello della Sala (Antinori) Umbria Cervaro della Sala Italy, Umbria

My second taste of this vintage, and my prior note stands: "A 'wow' showing for my first exposure to this vintage, and I usually like my Cervaro with substantial age. The Grechetto is hardly noticeable to me, but the balance of oak, fruit and acidity makes the 2012 a must-own wine for me. World-class."

Surprisingly approachable, with warm, sweet cherry and currant notes and a touch of herbaceousness that for me evokes some Right Bank traditionals. The Sangiovese was dominant, unsurprisingly. As the components better integrate, this could pick up another point or two.

Remarkably fresh upon being opened, still in primary mode, with many years to go. Bright palate of sweet spices and cherry. Concentrated and ripe palate of dark cherry, forest floor and faint smoke. The oak seems well integrated. Only the slightest hint of secondary characteristics that no doubt will develop with time.

A bit more advanced than I expected, a fairly sudden development which makes me wonder how much staying power the wine has. A gentle bouquet of herbs, sweet fruit and leather. Fully resolved on the palate, more finesse than power. Some barnyard stuff amidst the sweet fruit. Based on this bottle, I'd drink up.

Flight 3 - Sweets (1 note)

White - Sweet/Dessert
2008 Castello della Sala (Antinori) Umbria Muffato della Sala Italy, Umbria

The enticing nose of pineapple, lychee and marzipan set the bar too high for the palate, unfortunately. Soft, slightly diluted and unbalanced in the mouth, with disruptive acidity. A nice try, but prior vintages outperformed this by a large margin.
