Introduction

I got together with Jeremy, Hans and Daniel for a Thursday evening dinner - Chef Fabien cooked a 'Chef Menu' for us which was exquisite, as always.

Flight 1 - Aperitif (1 note)

This also went really well with the Caviar and Uni-themed amuse bouche.

White - Sparkling
2012 Franck Bonville Champagne Grand Cru Blanc de Blancs Pur Oger France, Champagne, Champagne Grand Cru

Muted mousse. Very light hay gold colour. Nose is immediately lifted, minerals, crushed oyster shells, high piano notes, fresh. Palate is beautifully fresh elegance, really knife-edge sharp with a real zing and laser definition. Great Epsom Salts minerality, great white flowers and white peach fruit. A gorgeous acidic backbone. Wow….! Wow! So chiselled and elegant....scintillating. Wonderfully resonant and reverberant on a very long finale. Is impressively persistent in the glass. Flight 2 - Hokkaido Scallop & French White Asparagus (1 note)

Wow...the wine really complimented the dish and vice versa.

My third from a case bought on release. Briefly decanted. Quite developed deep hay gold colour but beautifully alive and alluring on the nose…light acacia honey, honeysuckle in a cool summer night. White shoe cream comes out with more time in the glass. Palate has the same light honey/honeysuckle, good medium acidity and an attractive almond bitterness and some darker honey on the back palate. Just continues to evolve in the glass and get more rounder , more layered but still retaining a quiet, understated personality. Quietly but powerfully resonant and reverberant but very understated but gosh…94+

Flight 3 - 24 days dry-aged grass-fed Galcian Rib-Eye (2 notes)

Huge black-red totally opaque colour but slightly maroon and light at the edge of the glass. Nose is very reticent tightly coiled blackberry and its foliage. All the oak and caramel of youth has completely gone just leaving a very young and primary core that still needs another 10 years to evolve and emerge. Palate is wow!!! Drop dead gorgeous freshness with tart confit blackcurrant and still very primary youthful tannin. Heady and resonant… and long. Slowly mellows a bit with a couple of hours in the glass but only by millimetres. Needs another 10 years to properly unfurl and I have amended the CT drinking window accordingly. Otherwise go for a 4-hour decant. 92+ for now but loads of upside. Thanks, Daniel!

A first experience with this wine for me. Totally fathomless black-red colour. A massive wave of black/red bramble but rich fruit hits you immediately on the nose. A floral perfume element emerges overlaying the more expected white pepper etc. Palate is immediately deep, profound plummy, but with a lot of unresolved tannic structure. I would have thought this a 2012 if drank blind. Amazing new experience, especially with dry- aged, Galician grass fed rib-eye steak. Needs another 10 years to fully unfurl. 92+ easy for now. Totally deep red opaque colour. Nose is dry, chalky and stalky. Palate is similar but no sweetness whatsoever. Very dry. Enjoyable as a curiosity. Went great with a cigar. This wine is bulletproof in terms of ageing. This was once white Semillon....now it is somewhere else. 88. Thanks, Daniel!
