Introduction

A look at Chablis quality levels from one producer - William Fevre

Flight 1 - Fevre - 3 quality levels (3 notes)

White
2018 Domaine William Fèvre Chablis France, Burgundy, Chablis
87 points
Light yellow, the aroma shows lees, plain yoghurt, spice, ripe yellow apple and orchard fruits with a citrus twist.
A soft medium-bodied entry with crisp acidity that penetrates through to the finish. Classic Chablis with some brightness and that apple-edge backdrop throughout. A reasonably intense, medium-length, approachable wine with that citrus again on the back palate. Ripe.
White
2014 Domaine William Fèvre Chablis 1er Cru Montée de Tonnerre France, Burgundy, Chablis, Chablis 1er Cru
92 points
Light yellow, the aromas are all focussed and intense with minerals, earth, oyster shell, firm apple crushed rocks and lemon zest.
The entry continues streamlined with tight, incisive acidity, mineral and green apple. Defined with a linear palate shape, this feels a cooler year. Fairly long in length, the mid-palate shows gentle oatmeal and some spices of oaks, but the wine is quite austere (and not for the faint-hearted), although I do enjoy these styles!
White
2014 Domaine William Fèvre Chablis Grand Cru Les Preuses France, Burgundy, Chablis, Chablis Grand Cru
92 points
Light to medium yellow-gold. A delicate nose of mineral, oyster shell, chalk, smoke and rock dust scattered with green apple and lemon rind. Has a refined, upright feel to the wine, which is replicated on the palate that is raked back with strident acid and tightly packed with a saline thread. There are oak spices and more mid-palate stuffing and material to register as Grand cru, along with excellent depth and concentration. However, this is all about being tightly wound, mineral and crushed rocks/quarry dust. Not that fruity, but possessing a long finish, this is a smart wine.
