Flight 1 - Opening Bubbles (1 note)

PnP small glass. Very tight, searing acidity with no body. Corked up for 2 hours. Completely transformed with air. Honeysuckle and citrus on the nose with a touch of brioche. Some leesy notes. Palate is full and luscious with cream-sickle, citrus, loads of body, velvety texture and a finish that is super crisp and clean, but goes on and on. This is so young, but I'm giving it (98-100). Only knock right now is the acidity on the palate is a touch lower than desired.

Flight 2 - White (1 note)

Decanted 1 hour, back in bottle for 2 hours. Nose wasn't showing a ton, but had a cleanness with a great frame. Palate was in balance, deep white fruit and some vanillin notes. Continued to develop throughout the evening and was best about 6 hours after opening. Unfolded in the glass with layers and layers of white fruit and minerality. This is head and shoulders a different wine from 2 years ago, but still has a long way to go and tons of upside to hold.

Flight 3 - Red (1 note)

Double decanted and then poured 4 hours later. Initially had a lot of oak, but blew off with time. Nice mature red fruit on the nose with a fully integrated palate. Deep red fruit notes, some purple fruit and a solid weight and body. This is GC all the way. The cedar box never quite fully integrates, which is a signature on these wines. Wonderful pairing and a very, very good wine.
