Introduction
The final celebration concluding a glorious week in Scotland with golf every day, wonderful friends, and most importantly an incredible experience with David Lyle and Evan.
Flight 1 - Openers with Bollinger Grende Annee (1 note)
We had crab tagliatelle and the scallops/fois gras combo. Great flavors that complimented the Bollinger very nicely

Beautiful golden color, lovely mousse with pinpoint bubbles that stayed the course. slightly lemon/citrus mouthfeel, with great toasted nut/yeasty tones
Flight 2 - Les Pavots...what a wine (1 note)
Definitely a knock your socks off bottle of wine; fabulous fruity flavors. We all had the Scottish Angus Cheateau Briand..what a meal!

Fabulous wine. Huge nose with luscious fruit that jumps out of the glass. The immediate impression is superb, great balance and acidity. The alcohol content is fairly high, but the wine did not come across as hot. The mouthfeel is terrific with tannins nicely developed, and lovely roundness. Pure fruit flavors coming through, surprised that this only has 12% merlot. As the tastes develop, there is a definite anise note that comes through nicely in the finish. This wine is early in its development, but definitely very approachable now, will only improve
