CAA-WIN Folktale Wine Dinner

Chi Restaurant in Manhattan

Introduction

Six Folktale wines served with a four-course dinner at Chi, sponsored by the Columbia Alumni Association Wine Industry Network. (Greg Ahn is a Columbia grad).
Each course at Chi consisted of three or four different dishes served family style. In flights with two wines, one wine may pair better with one or two dishes, while the other wine paired better with the other dishes.

Flight 1 (1 note)

Rosé - Sparkling
N.V. Folktale Winery Brut Rosé USA, California, Central Coast, Monterey
A blend of 80% Chardonnay and 20% Pinot Noir. Medium to minus bodied palate with notes of strawberry, watermelon and citrus. The acidity is a bit on the low side as is the effervescence.

White
2021 Folktale Winery Riesling USA, California, Central Coast, Monterey
With low residual sugar of only 1.8% this Riesling showed lots of white fruit, lemon and good acidity.

Flight 3 (2 notes)

Orange
N.V. Folktale Winery Sol Train USA, California, Central Coast, Arroyo Seco
A skin fermented white wine with a slight orange tinge that is aged in a solera style for 6 years. On the palate there are notes of melon, apple and tangerine with tingly acidity.
Red
2021 Folktale Winery Pinot Noir Whole Cluster Reserve USA, California, Central Coast, Santa Lucia Highlands
A nose of red and dark fruits which carry over to the medium bodied palate showing black cherry, raspberry, cranberry and earthy notes. The acidity is fresh and balancing.

Red
2018 Folktale Winery The Hound USA, California, Central Coast, Carmel Valley
A Bordeaux blend of 60% Cabernet Sauvignon, 11% Malbec, 11% Merlot, 9% Petit Verdot and 9% Cabernet Franc. Medium to plus bodied palate showing blueberry, cherry, some cassis, some earth and a touch of mocha. The acidity is zesty enough to balance the fruit and there are some tannins on the finish. This wine will benefit from additional cellaring and may develop and integrate further.
Red
2018 Folktale Winery The Mountain USA, California, Central Coast, Carmel Valley
A blend of 83% Cabernet Sauvignon and 17% Malbec. Our WOTN. A really luscious, round, fruit-sweet medium plus bodied wine showing a mix of dark and red fruits - blackberry, blueberry, cherry - with some earth, cocoa and a touch of minerality. The abundant fruit just slightly outruns the zesty acidity and there are some tannins on the finish. This wine should definitely benefit from additional cellaring.

Closing

The Hound and the Mountain were the star wines that got everyone's attention and the attendees at our table were divided as to which wine was the WOTN. In summary, all wines were enjoyable and Greg and Maddy Ahn were great hosts.
