Flight 1 (4 notes)

Sake
N.V. Asahi Shuzo Dassai 39 Junmai Daiginjo Japan, Chūgoku, Yamaguchi
90 points
Colourless, bright, and fairly viscous. Sweetish nose, of melon, some white sugary feel, and wheat. Medium weighted, and quite a bit of sugary sweetness on the palate, with banana, some chestnuts, nutmeg, and a little hint of mushroom umami. Quite lengthy and persistent
Sake
N.V. Asahi Shuzo Dassai 23 Junmai Daiginjo Japan, Chūgoku, Yamaguchi
91 points
Colourless and bright. Aromas with a cool minty, even mineral start, then the slight melon sweetness, then chestnuts. Medium light body, but very intense in flavours, whilst silky mouthfeel, with some rose and lavender, chestnuts, then even a bit of chives and then nutmeg. It is nevertheless very enjoyable, but there seems to have quite a strong spicy umami hint which seems to be low quality in the books... hmm
Sake
N.V. Asahi Shuzo Dassai "23" Centrifuge Junmai-Daiginjo Japan, Chūgoku, Yamaguchi
92 points
Colourless and bright, but seemingly a slight greenish hue. Just cool mint and minerals on the nose. Light but really intense flavours and somewhat bright mouthwatering acids, of which the chestnut flavours taper off quickly but still keeps it's persistence
Sake
N.V. Asahi Shuzo Dassai Future – with Farmers Japan, Chūgoku, Yamaguchi
93 points
Colourless and starbright. Nose seems clean, with grey rockiness and hardly anything else sans a little hint of melons, and cool mint. Light, elegant, floral, and even sweetish chestnuts, corn, melon. Backpalate is dominated by florals and clean pepper spices. Nice!
