This one is tough to pinpoint. On PnP it didn't show much, seemed almost a bit astringent and so the bottle was capped with only less than a glass taken. A couple of nights later the remainder was consumed over a couple hours and really awakened. It showed dried wild herbs, strange perfume of flowers (elderflower?), salinity, hints of kelp and moss at times, crushed shells and almost a wet rust or wet rocks at the sea, sometimes a faint sweetness would come in. Various elements would seem to come and go. It really became an intriguing wine. It paired well with baked white fish.

    8/6/15, 8:53 AM - Wish I had read this before opening my bottle, as we had a very similar experience: the wine was totally closed off aromatically and hot with alcohol when we first opened it. After it warmed up and sat open for 30-45 minutes it started to come around much like how you described. Honey, wax, flowers, mineral water, bitterness, surprisingly deft and subtle for a white wine at 14.5% abv. I think next time i will decant this, or wait a while. Cool stuff!
