24 year old bottle of Cahors, leave it to Kermit Lynch to find such age worthy wine. We decanted this for an hour and had with a recipe for Hanger Steak, Cherry Tomatoes and Chimichurri sauce from Suzanne Goin (chef/restaurateur from LA). Food and wine were a great match.

Had with Fennel and pepper crusted tuna over chickpea salad

The wine looks light brown colored. The legs are fast. There is heavy sediment in the bottle. It smells like mushroom. It tastes like black pepper. The body is medium. The wine has smooth texture. The wine finishes short. The wine has low acidity.

Wine has held up well, slight browning and softness --but still retains structure.
