1996 Napa Wine Company Cabernet Sauvignon Oakville

This is a beauty of a wine. The Oakville Cabernet is from the “Rock Cairn” vineyard is a true gem in my humble opinion. This is 100% Cabernet and it is made in the classic old school style of Napa. The color gives away its age a bit with some bricking on the rim and at the core but it still has a nice amount of garnet in the core as well. For a wine that is 23 years old, the nose revealed some very lively fruit tones of black currant, plums, dried black cherry with baking spices, pipe tobacco, fertile tilled earth, cedar/cigar box and some herbs. On the palate it is medium to full bodied, which surprised me a bit with some very refined tannin structure balanced with just the right amount of acidity. Ripe plums, black cherry, currant, dried herbs, tobacco leaf and earth were prevalent and very well integrated/balanced on the palate. The finish was long and beautiful. Over another 4 or 5 hours in the decanter it held up very well. I think this is either just at peak or just edging past peak. It may have another 3 years left, maybe, so I would suggest drinking now or soon.

Unctuous, rich palate with candied orange, tangerine, pineapple and a bit of herbal tinge in the finish. A superb, intense wine.

Opened it on a whim when presented with a candied orange flan, and I immediately knew it was going to be a killer pairing.

2005 Château Pontet-Canet Pauillac Red Bordeaux Blend
I didn’t find it approachable (3 hours decant). Quite tannic. Needs loooots of time (closed compared to Lynch Bages of same year, much preferred that). Nothing like the 2010 I had previously. Not sure to be honest.

When someone (not referring to Champagne) says something is champagne colored this is what they mean. A steady center stream of small beady bubbles with some mousse. Bruised apple, white blossoms & funky honey nose. Initially a lemon zest/green apple note that is followed by a rich apple red apple turnover. Complex without being too abstract. Was planning for NYE but opened a day early and drank without any food (could be paired by why worry) while tidying the house in prep for NYE.

I have tinkered with serving this in something other than champagne stems to fully unveil its aromatics. I keep reading some thoughts that trend in this direction. What are your thoughts?

    1/2/19, 4:56 AM - Thanks for the feedback JVPHOTO. Before reading your response, I resolved to go with something of a more ballooned center and actually chose the new world Pinot glasses. They did not disappoint and now I know whey so many are going this direction. I will not use flutes again. Thanks again for a great note and comments on the stemware.
