2015 Domaine Guillemot-Michel "Une Bulle" Burgundy Chardonnay

a metode ancestrale sparkling. so no disgorgement, and also no added sugar for the second fermentation.
Ripe green apples. Brioche. Fresh but with good ripeness. Its a vin mousseux but drinks like a champagne. Liked it a lot.

Actually our "Bulle" is disgorged, otherwise the wine would be cloudy :)
However no sugar added whatsoever, during disgorgement we just refill the bottles with other bottles of "une bulle" that we are disgorging at the same time.

Also, we keep "une bulle" aging on it's lees (or "sur latte" as they say in Champagne) for a minimum of 15 months and up to 24months. We do 3-5 disgorgement a year and the disgorging date is written on the back label.

A touch malformed and unstructured. Bunched aromas showing little delineation and character. Quite buttery, with notes of melon and toasty influence. A touch thin on the palate. My second experience of Vire Clesse (the other being a Bongran), and both seem to be warm Chardonnay expressions, with notable oak presence, and just lack real precision and delineation. Decent, but not particularly memorable.

Our "Quintaine" is unoaked. Please try to open another bottle with a little more age, as you opened this one with only a few months in the bottle. I hope you'll prefer it then.
