Drank at a French Cuisine class at the Chopping Block Chicago. Decanted for 45 minutes prior and drank over the period of the next 2.5 hours.

Was a bit unimpressed - drank a bit one dimensional, not much of a finish.

Had it with a filet marinated in an Italian sauce. Paired well. Both my wife and I enjoyed it.

The last time I had a bottle of the Simi Cab, I thoroughly enjoyed it. This time, however, both my wife and I were a bit uninspired. I let it decant for a couple of hours, and it had a really nice nose to it. But the wine itself tasted flat to us.

Day 2 was a bit better, but only marginally so.

This was my last bottle of a case that I received back in December of 2005 and I think I let it sit in sub-optimal conditions too long.

I decanted for 150 minutes. It had a great nose, but was disappointing on the tongue. It tasted very one-dimensional and had next to no finish to it.

This is the 3rd year in a row that I busted this out for New Years Eve and it was defiantly better this year than last. Let it decant for 90-120 minutes. Smooth opening and big finish. The other guests loved it as well.

Let this sit in my cellar for the last 9 months or so after drinking the same vintage. Seemed to be better the 2nd time around. Had a bit more depth & complexity that I recalled..

Beware of the sediment. I didn't even realize it was unfiltered until my last glass.
