The '06 was wonderfully rich and drinkable immediately.
The '07 really needed either time or some rich, meaty food to open up (it's not entirely clear which, but I think it was the food).
Also interestingly, I think the '07 worked better with the food (Osso bucco) than the '06 did.

I think you'd have a lot of fun with a vertical, but I'd strongly recommend having some appropriate food around!
